Two refreshing drink recipes: Fresh Watermelon Juice & Fresh Cantaloupe Juice
WATERMELON JUICE
Ingredients
2 Cups Watermelon (medium chop)
¼ C sparkling water
Directions
- In a blender combine chopped watermelon and sparkling water.
- Blend until combined.
CANTALOUPE JUICE
Ingredients
2 Cups Cantaloupe (medium chop)
¼ C sparkling water

Two hummus recipes: black bean lime hummus & traditional chickpea lemon hummus
TRADITIONAL HUMMUS
Ingredients
2 (15oz) cans chickpeas rinsed
2 Tbsp. tahini paste
½ garlic clove
2 Tbsp. fresh squeezed lemon juice.
2 Tbsp. chopped parsley
1 tsp. paprika
Salt & pepper to taste
¼ C olive oil
Directions
- In a food processor combine chickpeas, tahini paste, garlic, lemon juice, parsley, paprika, salt & pepper.
- While mixture is blending slowly add olive oil through food processor chute and let hummus blend for 1-2 minutes until combined completely.
BLACK BEAN LIME HUMMUS
Ingredients
2 (15oz) black beans drained and rinsed
2 Tbsp. tahini paste
½ garlic clove
2 Tbsp. fresh squeezed lime juice
2 Tbsp. chopped cilantro
1 tsp. ground cumin powder
Salt & pepper to taste
¼ C olive oil
Directions
- In a food processor combine black beans, tahini paste, garlic, lime juice, cilantro, cumin powder, salt & pepper.
- While mixture is blending slowly add olive oil through food processor chute and let hummus blend for 1-2 minutes until combined completely.

Dry Ingredients
2 ½ C old fashioned oatmeal
½ C whole wheat pastry flour
½ C all purpose flour
1/3 C flax seed
½ C raisins
½ C cranberries
½ C dark chocolate chips
½ C pumpkin seed
½ C walnuts
½ tsp. baking soda
¼ tsp. salt
Wet Ingredients
1 medium banana - mashed
¼ C vegetable oil
½ C almond butter
½ C real maple syrup
½ C applesauce
1 tsp. cinnamon
1 tsp. vanilla extract
2 large egg whites
Directions
- Preheat oven to 365 degrees
- Prepare an 8x10 baking dish (spray oil & flour)
- In a large bowl, combine the first 11 dry ingredients together
- In a mixing bowl with a fitted paddle, add mashed banana, vegetable oil, maple syrup, applesauce, cinnamon and vanilla extract. Turn speed to medium and mix together adding egg whites one at a time.
- Turn speed to low and slowly add dry ingredients into mixing bowl until just combined
- Fold mixture into prepared baking dish
- Bake in 365 degree oven for 20 minutes, or until a toothpick comes out clean.
- Cool slightly before cutting squares
Whole wheat tortillas filled with potatoes, peas, cumin and cilantro (vegan)
(Serves 4-6)
Ingredients
3 C russet potatoes boiled and chopped (skins on)
1 ½ tsp cumin seeds
1 Tbsp ginger minced
1 Tbsp serrano or jalepeno pepper chopped (1 pepper)
3 Tbs green onion chopped
1 Tbsp ground coriander
½ tsp cumin powder
2 Tbs vegetable oil
¼ C frozen peas thawed
¼ fresh cilantro chopped
Salt & Pepper to taste
Directions
Preheat oven to 365 degrees
- In a heavy skillet toast cumin seeds for a minute.
- Add ginger and jalepeno pepper to cumin seeds and stir.Add oil, potatoes, onions, coriander and cumin.
- Let spices cook through for 5 minutes and then add peas and cilantro. Combine mixture and turn off heat.
- Let potato pea mixture cool a few minutes but make certain it is still warm.
- While hot potato pea mixture is cooling place 4 whole wheat tortillas onto two 13 X 18 inch baking sheets.
- Divide warm mixture among tortillas and place 4 more tortillas on top of spice mixture.
- Press down and use the warm potatoes to serve as glue to help hold tortillas together.
- Bake for 7 minutes until heated through.
- Cut into pieces and top with mango chutney.
Seasonal fresh fruit topped with an emerald green "paint" made from almond butter, maple syrup, orange juice and spirulina.

Ingredients
1 Tbsp Almond butter (heaping)
1 Tbsp Tahini (ground sesame)
1 Tbsp Maple Syrupe
1 Tbsp Flaxoil
1 Tbsp Spirulina powder (you may substitute your green protein powder)
1 Tbsp + 1 tsp fresh squeezed lemon juice
¼ C fresh squeezed orange juice
Fruit Salad Ingredients: (choose your favorite fruit. Below are suggestions)
½ C sliced strawberries
½ C chopped apple (with skins)
½ C slice kiwi
½ C blueberries
½ C chopped peaches (with skins)
½ C chopped avocado
1 C whole grain cereal flakes (optional)
Directions
- Place the first 6 ingredients into the bowl and stir to combine.
- Slowly pour orange juice if needed to help thin paint to a thin paste.
- Pour paint over fruit.
- Top individual portions with whole grain cereal
