energy barsChewy energy bars packed with banana, almond butter, pumpkin seeds, cranberries, and dark chocolate.

(Serves  8)

Dry Ingredients
2 ½ C old fashioned oatmeal
½ C whole wheat pastry flour
½ C all purpose flour
1/3 C flax seed
½ C raisins
½ C cranberries
½ C dark chocolate chips
½ C pumpkin seed
½ C walnuts
½ tsp. baking soda
¼ tsp. salt

Wet Ingredients
1 medium banana - mashed
¼ C vegetable oil
½ C almond butter
½ C real maple syrup
½ C applesauce
1 tsp. cinnamon
1 tsp. vanilla extract
2 large egg whites

Directions

  • Preheat oven to 365 degrees
  • Prepare an 8x10 baking dish (spray oil & flour)
  • In a large bowl, combine the first 11 dry ingredients together  
  • In a mixing bowl with a fitted paddle, add mashed banana, vegetable oil, maple syrup, applesauce, cinnamon and vanilla extract.  Turn speed to medium and mix together adding egg whites one at a time.
  • Turn speed to low and slowly add dry ingredients into mixing bowl until just combined
  • Fold mixture into prepared baking dish
  • Bake in 365 degree oven for 20 minutes, or until a toothpick comes out clean.
  • Cool slightly before cutting squares
